ravenous is... sorta an action movie, isn't it?
'jack death' (deth?) from the trancer movies is pretty awesome, but you could not beat 'ash' from the evil dead movies.
he cuts off his own hand, puts a chainsaw on it, and carves up the dead. loses his mind, goes back in time, kicks ass all the way.

Does Pitt/Norton as Tyler Durden count as action?
Goes through hell to exorcise his own daemons, and get the job (as he sees it) done in the end (in the movie anyway).
The guys in Boondock saints are up there. Breaking their own hands to free themselves, getting increasing injuries to take out justice on the mob and criminals in general.

Nice. Two agreements right after my post.
The funny thing is I'm not an action movie guy. I mean I like it, but only within context. If it's got something to think abut like the two I mentioned, or a twist like the two I mentioned, or even romance (life, not necessairly between two people) like Crouching Tiger I'll eat it up. But it's gotta have context or a great idea.
What about Ripley in Alien (etc)?

Yeah, I hear ya. Fight Club is one of my favourite movies and I'm not really an action fan either, my action flicks need to have more than action. Another good Pitt action movie was Spy Game.
