Default BBQ Sauce?

Anyone remember Holy Smoke that was just off of Blackfoot? Man that place not only had a tasty pulled pork sandwich, hey had some fantastic BBQ Sauce too.



I've been trying to find something in the same vein as their JD Sauce but not having much luck or anything of quality for that matter. It can get expensive randomly buying a bottle at the grocery store, getting it home just to find it's disappointing. Kraft is crap, Cattle Boyz doesn't seem to be the same these days.


What's your go to? I'm either going to have to stand in the BBQ sauce isle, rip the caps of of each and sample until I find something I like or get thrown out or try my hand at making something homemade.


That being said, what's your go to?

i've been making my own bbq sauce for years - i really like this recipe:


Basic BBQ Sauce


Serves: 6 ½ cups

Ingredients
  • 5 cups ketchup
  • 1 cup light brown sugar
  • 2/3 cup dark amber maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tbsp molasses
  • 1 tbsp chilli powder
  • 1 tbsp dry mustard
  • 1 tbsp hot sauce (frank’s red hot)
  • 1 tsp Worcestershire sauce
  • ½ tsp cumin
  • ½ tsp celery salt

Instructions
1. Mix all the ingredients together well in a sauce pan – med heat
2. Simmer for at least 20 minutes

That sounds worth trying for sure. How long do you find that lasts in the fridge for?

i've never had a problem with it going bad.... mind you, i probably make it every 4 months becuz we go thru it. i absolutely LOVE it on smoked ribs!

**just cut the recipe in half if you want to try it. i like this amount becuz 5 cups of ketchup is pretty close to the big bottle of ketchup we get from superstore

There is a Jack Daniel's branded BBQ sauce available.

I don't know how widely available it is in Canada, but their website says its available at Cabela's, Costco, and Save-On: https://jackdanielssauces.com/find/

Making BBQ sauce is truly one of the great culinary joys in life. So easy to make, very hard to mess up, and can go in so many different directions.

Just dice up an onion and 2 cloves of garlic. Sweat them in a fair amount of butter/bacon fat/beef tallow. Add in your spices - cumin, coriander, paprika, chili powder, onion powder... Pretty much what BC-Chris has listed.

Then the fun begins. You pretty much just raid your pantry for whatever you have.

Here are things that go well in a BBQ sauce ( not all together)

Molasses
Coffee
Whiskey/Rum/Beer/wine/tequila/moonshine
Ketchup (basically tomato paste vinegar and sugar)
All kinds of mustard
All kinds of hot sauce
All kinds of citrus (orange, lemon, lime)
Fruit - cherries, blueberries, peach, apples, pineapple
Any kind of fruit sauce like apple or strawberry
Soy light and dark
Fish sauce for a funky BBQ sauce
Gochujang makes a great BBQ sauce!

Add your sweeteners - honey, brown sugar, maple syrup

Blend, simmer, and taste.

I like Sweet Baby Rays. Two other brands that can be good, although not in all varieties, are Stubbs and Kinder's.

Sweet Baby Ray's is now available at Wal-Mart and is on sale right now. I just stocked up.

I also use Blues Hog, which I get at Barbeques Galore. The staff at their north store has been pretty good about recommending a sauce if I describe what I'm looking for. Might consider.going there and asking.

Sweet baby rays is better than I can make for a sugary KC BBQ sauce.

But my favourite sauce is a Carolina mustard sauce.

I start from this recipe from the spruce

I go a little less vinegar then the recipe calls for and the add a little fish sauce and msg for more Umami.

Love it on pulled pork.

I hadn't contemplated this, but hell yeah! I have all sorts of random stuff that just has the tiniest bit left. It'll be awesome to use it up and make space in my pantry and make a BBQ sauce for the summer. I'm excited!

It'll be fun to play with the salt, sweet and sour balance. Then depth of flavor and also application of a reduction/simple syrup skillset. I often make special dipping sauces for the kids for fries and nuggets and stuff. It'll be interesting to go further and do a BBQ sauce and also use up some of the tiniest pockets of spices I have so that I can migrate to a newer (and more flavorful) package of the spices.

I recently grabbed Kinder's Hot Honey BBQ Sauce from Costco and it's excellent, it's been going on everything recently.

Bourbon BBQ Sauce

Ingredients
¼ cup bourbon whiskey

¼ cup packed brown sugar

⅓ cup ketchup

1 tablespoon white vinegar

1 tablespoon hot sauce (such as Frank's RedHot ®)

¼ teaspoon cayenne pepper

¼ teaspoon garlic powder

1 tablespoon honey

2 tablespoons butter

Stir the bourbon, brown sugar, ketchup, white vinegar, hot sauce, cayenne pepper, garlic powder, honey, and butter together in a saucepan over medium heat; cook, whisking occasionally, until the mixture begins to bubble. Reduce heat to low and cook at a gentle simmer, whisking occasionally, until the sauce thickens nearly to the consistency of maple syrup or molasses, about 15 minutes. Remove from heat and allow to cool.

I add a bit more bourbon to mine, but great as is!
I also crank up heat a bit with more cayenne or hotter hot sauce

Exactly! Just taste as you go and let it reduce to the right consistency.

Sorry, I know this isn't gourmet. It goes in sale for $0.97 a bottle. But I love it... I could drink this stuff straight.

Bullseye original. It's been around forever but it's still great. Cattle Boyz is good for grilling with but it's too molasses-y for use as a condiment.

If you can get down to the states, bring back some Arthur Bryant's. Amazing.
