I thought I read this but do the guaranteed picks carry into the playoffs? Are we using guaranteed picks in the playoffs? For example, if we use 5 *s on one team are we prohibited from giving an * to that team in the playoffs.

Yes the Guarantees carry into the playoffs. There wont be any guarantee in the Grey Cup, because there is only one game to pick.
