Personally, I prefer to use Word for writing down notes. I don't like how unstructured my notes turn out when I use OneNote.
One thing that I like about OneNote is the optical character recognition. When I write using the tablet, I use OneNote to convert my hand writing into text, which eventually gets copied to Word.

I use OneNote all the time at work. It basically replaces sticky notes on my desk for me. I love that I can type/draw on it where ever I want unlike word, and I can tag information to organize things I put on it. For example, I can put some stuff in, then tag it as an Outlook task/meeting request/etc so it will remind me to resolve it later.
The copy and pasting options are pretty impressive. I can grab info from a webpage, and it links that text/picture/data back to the webpage if I need to go back to it. I can drag stuff out of OneNote and use it in other programs too.
I don't think the program's uses are very obvious unless you try it out for a while. Give it a shot and if it isn't for you, then just ignore it. I don't see any reason to delete it though.

OneNote is a very interesting product. The way it creates documents is far more organic than Word, which is very structured. Some people like this structure. I don't really take enough 'notes' to take advantage of OneNote myself, though I use OneNote on my WP7 phone for my grocery list and etc.

I use it to take notes during college lectures, works wonderfully. I can have several notebooks and organize the tabs, which is very handy and neat. Never have to worry about hitting save, either.

A fascinating feature of OneNote, that not many people take advantage of, is the ability to have more than one machine editing a notebook simultaneously (edit: on a LAN, not over the internet). The changes are replicated to all machines in near-real time without having to save or re-open the OneNote document. There is a wizard built in that handles configuring the file share required on one of the machines, as well as instructions for mapping the drive and opening the document on other machines.
Works quite well, and can be quite handy in meetings, group work, as an ad-hoc wiki or electronic whiteboard, etc.

Can you do diffs on previous versions, what about iphone support. My system right now is just a text file synced with drop box. More just for my todo list and a few project notes though.
