Custom Skate Sharpening

Does anyone know good places (preferrably in the north) that do custom skate sharpening? Or even places that you can pick your hollow? I'm looking for a place that will do a shallow/flat hollow and it seems everywhere I've been before (Sportchek, etc.) has sharpened them on the medium/deep side...a little too sharp for my liking...anyone know any places?
