Hate to break it for you, but most authentic Chinese restaurants have a Chinese menu that's different from the English menus they give to non Asian people
The English menu usually features the items that are commonly ordered by Westerners (Ginger beef, fried rice, beef and broccoli...etc)
The Chinese menu has a different variety for things, although they are occassionally translated into English as well for the Asians that can't read Chinese (me)
For the ultra secret items, they are written on a board or poster and not listed on the menu. That'll be equivalent to the daily specials
