are any of these worth it or do you have better suggestions? Could a dummy like me install and work on these with relative ease?
Of those the only one I would recommend is the QNAP. It would make the best Plex server. I don’t think you’d have a problem setting it up. You access the UI via a browser and it’s fairly intuitive.

I have a Synology NAS and I think this one is comparable to what you’re looking for.
