So yes, it is bizarre in the context of literally every other product launch outside of the pandemic. The pandemic produced the conditions that have resulted in this situation where you can't easily buy a product that has been on the market for two years now. And that is... y'know, bizarre.
Is it really that different though, especially considering the pandemic?

PS3 had long periods of stock being unavailable, I remember being shocked when I walked into a store and was able to buy one about a year after it launched.

I feel like the PS4 and Xbox One were actually a bit of the exception in that they were easier to get at launch, but the PS5 has sold more than both of those systems in the first year so the demand is just higher than it's ever been too.
