My go-to places are:
Kinjo (multiple locations - just binge out at the floating bar
Aji (NE on 32nd) - Just a nice family-run place
Shibuya (16th) - I'm moreso there for the cheap oysters Mon-Thurs and their beef tataki, but their sushi is actually super solid.
Yamato (across from Churchill) - MASSIVE chunks of salmon sashimi. They also serve lobster sushi there, which I haven't seen anywhere else.
