Two of the things you really have to watch out are iron and protein intake. They are much more difficult to get from vegetarian food.
Some good food for this:
Black Beans, Pumpkin Seeds, Spinach (and dark green vegetables for iron), Tofu and anything like veggie burgers, veggie sausages.
The worst thing you can do is just remove the meat from normal food you would eat without making any changes.. it probably won't be a really balanced diet.
