Ya, the last time I tried to make a lighter "lager" It ended up at 6.1%. It was delicious, but failed in my goal! I'll really have to pull back the fermentables. It's a bit of a delicate balance between the sorghum and rice but I've got a pretty good idea of how the behave now. Mostly need time. They really need 4ish months to mellow out, which is the biggest issue I have with the commercial stuff.
