Have you tried glutenberg? Or done any homebrewing. You can use other fermentables instead of barley and wheat.
I make a mead you would like. Gluten free (only fermentable is honey) and carbonated. 5-8%abv.
I'm hooked on New England IPAs right now so I have been brewing Double NEIPBraggots. I love the late addition aroma hops but every now and then I like a high IBU west coast IPA.

Zero Issue - Nemesis
Origin - Anything they make is great but only available in the brewery. Also a malting house
Town Square - Megawatt
Grizzly Paw - Red IPA
Annex - Any NEIPA. Or any limited edition IPA
Banded Peak - Hazy IPA
Township 24 - Nitro Stout
Last Best - Tokyo Drift
Tool Shed - Pink Boots DIPA
If anyone is a Guiness fan the head brewer at Township 24 is a huge fan and made his stout with Guiness in mind. I think it's better than Guiness with the nitro they installed in the tap room.
