Iceberg season begins about late April, so early May is likely a time for that if you want to see Icebergs (Also, Iceberg beer from Quidi Vidi brewery is pretty good, if not special, as they brew it with iceberg water)
Gros Morne National Park is really really nice as well, it still might be a bit cold and L'anse Aux Meadows may not be open at that time, but I agree about the roads, really fun to drive on.
If you've only got a week, you have to pick either east or west, there's no way to take in ALL of Newfoundland within a week.
