It's all about your microbiome. Basically, you haven't had a lot of fiber in your diet before, so the bacterial composition of your gut is low on those bacteria that feast on fiber. That leads to incomplete digestion and slow movement. Your gut will limit water absorption in order to move the material along, so you feel bloated. Extra water will help temporarily.
It will probably take a month (or maybe even two) consistently being on that diet for your microbiome to significantly change to the new diet.
