The mash should settle. When you rack it back to the bucket just be really careful not to stir it up. I've always been a fan of waiting far longer than the instructions say, I find the beer is always better when not rushed. 2-3 weeks is not at all unusual for me, though with gluten free I go even longer, as it is stubborn.
