For the second note, I think in almost all cases connecting the 8-pin CPU power cable provides enough power. I have a 5950X system with a 3090 that's fine with just the one cable connected.
For the first note, I believe the adapter is necessary to use the case's USB-C port because the MB you picked is missing this connector:
