I don't know if yours is like mine, but 160 and 225 are low smoke and high smoke settings which intentionally swing the temp further to be able to generate more smoke from the fire box. That's by design in a pellet grill, and the food won't be affected by a +/- 20 degree swing if the average is what your set point is. Once you go over 225, like 250-550 on mine, the swing is less because its no longer smoke mode, acting like more of a oven/grill/bbq at that point.
