I would use cat 6 for in wall cable runs. This isn't an HDMI over IP connection, but a pair of cat 6 or 5e cables representing a wire for wire uncompressed HDMI connection. Just buy adapters that can convert 4K signals. There should be no difference in quality using a pair of ethernet cables to replace a single HDMI cable.
