Also that they are so far in and have alienated themselves from those subscribing to conventional science that they can't go back. The doc talks about how that now it's becoming a widespread thing, they are getting funding, which means they are conducting their own independent studies and experiments.
As this happens, even within the documentary (gyroscope, light beam experiment), they are discovering the universal truths we already know. They are slowly finding out they are wrong, but there is no way back.
They're separated from mainstream society, and if they flip they will be shunned (hard) by other flat-earthers. So it's either fully commit to something false and have belonging, or go back to nothing. It's why they simply can't accept any evidence that proves them wrong.
It's just kinda...sad, really.
