Thor is actually a really good suggestion, Jason Aaron has been writing Thor uninterrupted for about 5 years now. If you want to go back and check his run out from where it started, you can try reading Thor: God of Thunder (2012). That series leads into Thor (2014), which features Jane Foster as Thor but still heavily features Odinson and the usual Thor cast. From there you go to The Mighty Thor (2016), with a pit stop in the limited series The Unworthy Thor (2016). If you don't want to read all of that background and are just looking to dive in, Thor #700 was recently released and is a jumping on point as part of Marvel's Legacy initiative/advertising/whatever it is.

If Doctor Strange is more along the lines of what you want to sample, start with Doctor Strange (2015) by Jason Aaron and Chris Bachalo. It's been a well received series, and while Aaron hasn't written all of it he's been succeeded by Dennis Hopeless and most recently by Donny Cates.

As for tie-ins, you can generally skip the large events even if the series you read is side-tracked by it. Thor and Dr. Strange may have tie-ins to Civil War II or Secret Empire, I can't say for certain - but you definitely don't need to read those events to keep up with your series of choice.
