The second deal is significantly worse. Beaudoin is interesting but I doubt he becomes a top line C, which means the Flames are getting more of the same level of assets that they already have. The additional late 1st round pick probably gets another middle 6 forward, which again generates more of the same without addressing the big need.
Of course, the biggest wrench in the idea is Kadri. Chances are good that he wouldn't want to go to Utah and then we are back to square 1.

That's basically three late first rounders plus Cooley and a B prospect (Kadri is worth 1st plus B prospect; Whitecloud maybe a 1st) for the 4th overall pick.
It's doubtful they'd do a quantity for quality deal like that, but it's certainly not too much. It's probably too little.
