Had a very heavy gluten day yesterday. Work function, couple beers and pretzel bites aplenty. My arms were on fire last night and guts not good today. I google DM'd gluten arm rash and its the exact thing.
Doctor not helping, some creme that doesn't do anything, blood tests every couple weeks for pretty much a year.
How does it usually present itself?

If it’s ceoliac you would have always had the gene for it but it for whatever reason wasn’t active. Things like stress illness or surgery can cause it to be activated later in life or you have always had the immune response and intestinal damage but just not otherwise symptomatic.
Before cutting out gluten ask for blood work first. There is a box they check off for the gluten allergy test. If you go off gluten bloodwork won’t show the immune response. If positive for antibodies they can confirm with an intestine biopsy.
