I'm asking more in reference to the two innings in a row against the mariners where he got out of bases loaded, one out with two double plays in a row. So I guess my question is how much can they control where the batter hits it? Both regarding direction and height?

Imo direction is mostly luck. There are definitely some pitchers that get way more groundballs/flyballs, so I think launch angle can be pitcher skill.
