You can get your fill as much as you can afford around St. Andrews and Inverness. Don't have anything to add to what Weitz mentioned. Your budget and time is all that will limit you really. Plus are you going to golf, or are you hoping to fit some golf in while you visit Scotland?
And if you're going to golf, are you a golf nerd? More specifically are you a golf snob who looks for way to one-up the less sophisticated, mainstream travel golf crowd? But more importantly, are you looking for a bargain?
If so, you'll want to try the Machrihanish (OG Machrihanish and Machrihanish Dunes), Dunaverty, Shiskine, Corrie route. The Machrihanish courses are world class and half to a third of the price of the top courses around Inverness and St. Andrews.
It's cheaper and a pretty unique travel spot, but more isolated and would take longer to get to than going to Inverness from St. Andrews. But a neat drive that would even include a ferry if that appeals to you.
