I just make my own philly cheesesteaks.

Recipe (serves 4)

Put 2 sirloin steaks in freezer for 60 min to firm up.

Slice one whole onion thinly, and cut one whole red pepper into slices.

Heat the onion and peppers in a pan with olive oil, salt and pepper and cook on medium-low until caramelized (30 min)

Take beef out of freezer. It should be firm but not solid.

Cut beef into very thin slices (easier because it's half-frozen) and spread on a large chopping board.

Pat beef slices dry with paper towel. THIS IS ESSENTIAL TO GET A SEAR.

Generously season beef with salt and pepper.

Heat canola oil in a pan at high heat (8/10). Turn on hood fan.

Sear the beef in batches, ensuring that the pan is not crowded. The meat should be in one layer, not piled in.

Prepare 4 sub buns by cutting them open and spreading cheese whiz on them (you can use real cheese but it won't be the same).

Fill each bun with a portion of the seared beef and another of the onions and peppers.

Cut each bun in half.

Eat with a ready supply of paper towels.
