There are Rumors that Sony is
replacing the 60gb version with the 80gb version. The 80gb version will apparently have a price of $599 (USD) again.

If you want to get a PS3 at the current price of $499 USD or $549 Cdn, I'd get one asap. Dont forget about the 5 free movies.
Remember, hard drive size means almost nothing for the PS3.
Any 3.5" notebook hard drive can be used to replace the OEM hard drive. Right now, a 100gb Seagate is $90 at Memory Express, which saves you $10 and gets you 20gb more space. A 250gb Western Digital is $230.
