Coincidence, I'm in China right now. Back in Canada next week. Given the 5,000 years of history, China's definitely the place if you're interested in history and culture. It's actually mind blowing once you're here checking out the sites. People here are friendly and willing to help even if they don't speak English well - they'll try their damndest to help you!
Lots of suggestions for you, starting with Shanghai and Guangzhou and Hong Kong. Easy to navigate subway systems that will take you everywhere you need to go.
Tons of nature all over China and excellent food. Despite our dollar being where it is compared to USD, it still goes a long way in China.
