I do understand the "it doesn't really affect me... if he gets hurt, that's his problem" thinking, but what if you were driving past this guy who is refusing to wear a helmet, make contact accidentally, he slips, flips and cracks his head open?

Sure, it's his own fault for not wearing a helmet, but there's no doubt you'll feel guilty if the injury is serious, or worse consequences come about. Worse case scenario, he dies, while you live, knowing it was your bump that killed him.
