Dash cams by default use the cigarette lighters to plug in via USB. I'd recommend buying a cigarette lighter adapter that has at least two USB without being unreasonably big. Easily done with ones that have FM transmission so you can wirelessly play music from your phone if your car is so old it doesn't have bluetooth. Hardwiring kits are typically around $15-30 additional to the cost of of a dash cam. It's intentionally putting in more effort to hardwire a dash cam.
There's cameras that have both front facing and back facing. Most people just do front. Back is relatively easy as long as you have enough wire. Securing wires isn't too bad. A bike tire lever to jam it into the trim works reasonably well without potentially damaging/crimping the wire. I've also seen someone use the metal clasps for medical bandages to hold the cable to the fabric on the roof if they didn't want the cable on the floor. Tape doesn't really work on that roof stuff though, and velcro doesn't always seem like a great option without potential damage.
But depending on how old your car is, you might even want to shoot higher and go with a smart screen. They're like $120-180. The camera is built in and it can wire to the AUX port for sound to play in the vehicle wirelessly through the screen. The screen also offers android auto or apple car play which is more than just wirelessly playing music, it's also a bigger screen for maps etc. There's options that go on/replace the rearview mirror. Others that go on your dash. Other than buying another 3M sticker later on, you'd probably have no issue moving it from one vehicle to another at a later time if you so desired.
