Ooooo offals is another good one and again, I think it comes down to - and I say this knowing the risk of getting completely piled on - the lack of any sort of food culture that is North American-based. As with anchovies, offals are eaten by virtually all other cultures in the world (Asia, Poland, Italy, France, South America, Mexico, etc.) but generally disliked by North Americans and Europeans except for the few I mentioned.
