My wife used the aeropress and loved the quality more than drop coffee at home. But then we were gifted a v60 pour over (perhaps similar to what your wife uses) and she has preferred that ever since.

Both are paper filtered, since aeropress is more immersive brewing vs drip brewing for the pour over. The expected coffee flavors is more typically concentrated in the aeropress. The nuanced other flavors are typically more noticeable when using a pour over when the typical coffee flavors aren't concentrated.

Clean up wise, for single cup, both easier than many other methods like French press and drip coffee. Aeropress has less things to put away, but takes a few seconds longer to rinse than pour over. Pour over has more stuff to put away and potentially more stuff that takes up more space, but takes a little less time to rinse.

Different results though. Like comparing scotch, bourbon and rum. It can either be a super noticeable diffence for you, or barely noticeable. Just go with what you like.
