I would suggest that is all you need to do. Write out what you are giving them, and have them sign that both parties agree that this is full compensation for the damages.

Might I also suggest you write it up for $995 instead of $1000. Give him the extra 5 bucks, but with it being under $1000, nobody can ever say you needed the cops involved.

My university contract law courses are a little fuzzy, but I seem to recall that a contract to do something illegal is voidable. Keeping it within the bounds of the law keeps it nice and legal.
