I will in be in Regina this weekend and I basically have one night and most of the following day.

Where are some good places to eat and things to do? We are staying centrally but will have a car. Two adults. I have been there for business before and didn't really have any time to explore, and I can appreciate the jokes about the place. Help me change my opinion of the city, if that's possible.
Uhh... tickets to the Regina airport?

Regina is kinda comparable to something like Lethbridge. There might be some stuff, but not much that you can't really see in Calgary and surrounding areas. Regina is so small that if it takes more than 10-15 minutes to get to, it's basically across town. Food and drink wise, there's some surprisingly decent places. Just follow the reviews. There wasn't anything that I felt I couldn't get in Calgary though, and Calgary isn't a true big city food and drink hub. Honestly speaking, I think there's more unique and interesting stuff around Lethbridge than Regina but IMO Lethbridge feels more modern and has more stuff that would entertain adults than Regina. I haven't checked out Medicine Hat extensively, but I think it'd be similar to my opinion on Lethbridge vs Regina.

Walking around Wascana Lake (reminiscent of Lake Henderson in Lethbridge)
Going to different malls and feeling like you're going back in time to 1990, early 2000s?

Regina beach? (45 minutes away) I've seen people fishing in that area too.
Soak in hot springs in Moosejaw or visit the Moosejaw tunnels? (45 minutes away)
Outlaw caves? (2.5 hours south)

Are you driving from Calgary to Regina?

Great sand hills (1:45 past Medicine Hat)
