Monk fruit has an aftertaste that I think many might find a bit odd. If trying to DIY a sauce with that, be prepared to do a lot of experimenting. TBH, lots of those sugar replacements have that type of taste. Monk fruit just has a bit more, so you may have to tinker around to allow the flavors to synergize rather than clash. I like Monk fruit and I drink it as a hot beverage, but I know there's a baseline taste that weirds a lot of people out.

TBH, I'd suggest a more simple approach. Try making a sugar free cola bbq sauce. Something like this (I just randomly searched one) but replace the regular Cola with a sugar free pop of your choosing. Then further tweak it to your needs and wants (ie: spices like paprika, cumin, bay leaves, cloves etc.).

I make soy sauce chicken/pork ribs with Cola or Ginger Ale, so I'm pretty confident a BBQ sauce with pop as a basis should be pretty tasty. Something like this, but I'll also put in stuff like tea bags, bay leaves, cloves/cinnamon/star anise, cumin etc.:

Other than specific spices for specific tastes, just think of the other stuff is basically water, salt, acid or sugar with slight variations in flavor (ie: cooking wine, soy sauce, sugar, cola, oyster sauce etc.).
