It'll be fun to play with the salt, sweet and sour balance. Then depth of flavor and also application of a reduction/simple syrup skillset. I often make special dipping sauces for the kids for fries and nuggets and stuff. It'll be interesting to go further and do a BBQ sauce and also use up some of the tiniest pockets of spices I have so that I can migrate to a newer (and more flavorful) package of the spices.
