Making BBQ sauce is truly one of the great culinary joys in life. So easy to make, very hard to mess up, and can go in so many different directions.
Just dice up an onion and 2 cloves of garlic. Sweat them in a fair amount of butter/bacon fat/beef tallow. Add in your spices - cumin, coriander, paprika, chili powder, onion powder... Pretty much what BC-Chris has listed.
Then the fun begins. You pretty much just raid your pantry for whatever you have.
Here are things that go well in a BBQ sauce ( not all together)
Molasses
Coffee
Whiskey/Rum/Beer/wine/tequila/moonshine
Ketchup (basically tomato paste vinegar and sugar)
All kinds of mustard
All kinds of hot sauce
All kinds of citrus (orange, lemon, lime)
Fruit - cherries, blueberries, peach, apples, pineapple
Any kind of fruit sauce like apple or strawberry
Soy light and dark
Fish sauce for a funky BBQ sauce
Gochujang makes a great BBQ sauce!
Add your sweeteners - honey, brown sugar, maple syrup
Blend, simmer, and taste.
