I was dubious about how well an electric sharpener would compare to a manual whetstone, but damn it makes a way sharper edge than I could ever manage in a fraction of the time. I had 4 knives that were heavily abused by my wife and her mom, and once I had the technique down it took no more than 5 minutes on each to go from rough chipped blades to the sharpest knives I've ever used. I'm sure a master sharpener could still beat the machine with high end stones, but for amateur cooks this thing is a game changer

Can you cut paper with it as well as you would after using sharpening stones?
It didn't take long to learn how to properly sharpen with stones and a strop. Nothing is as satisfying as that smooth paper magazine cut afterwards. I would never go back to pull through sharpeners for example. The amount of material they peel off is terrible nevermind the ####ty cut.
