I do agree it often feels not like Star Wars though. That first scene with Carrie-Anne Moss felt like the Matrix. Not just because of Moss, but because there was such a heavy emphasis on the martial arts. That initial fight was way more like something out of the Matrix than Star Wars.
Yord feels almost cartoon like. There are other parts that kind of remind me of Guardians of the Galaxy.
Apart from Yord, none of the characters really get on my nerves. Mae is likeable. I'll keep watching. It's a big step up from Ashoka.

Agreed on borrowing from other franchises for "new" ideas and turning the Jedi into some kind of martial arts order and the concept of the force and balance into this pale imitation of buddhist doctrines, instead of its own thing...which it always was. The force is the force. And talking about it must always be paired with the binary sunset theme!
All that said, this show is an improvement on recent ones. At least so far. It's not breaking any ceilings as of yet, but I don't think any one expected it to.
