Not really true. I've got a good collection of kid's artwork and alphabet letters magnetized to our fridge.
Perhaps aluminum is only used in the more budget minded models.
And it only takes me about 5 minutes once a week to go around with the special stainless spray and do the Fridge, Microwave and Dishwasher... no different than regular kitchen cleaning.
If anything is trendy, I would say it is black more so than stainless.
