It's about preserving culture and resisting assimilation. If every Jewish person married a non-Jewish person, the Jewish people would simply cease to exist. Jewish people also have a history of being discriminated against heavily in Christian nations.

You're misrepresenting mainstream Christianity/Islam with all forms of those religions. There are plenty of versions of those religions that are also tied to ethnicity/culture. For example Greek Orthodox. It's almost entirely practiced by Greek people of Greek ethnicity.

The idea that Jewishness is unique at being based around ethnic background is totally absurd and just hateful. In fact, research has shown that 58% of all Jews in America married non-Jews, with rates being much higher for non-religious Jews:

So to answer your question. No Jews do not discriminate against other ethnicities more than any other cultural/ethnic group.
