There were rumors that Dave Filoni wanted to insert her into Rebels, after the slaughter on the Iquisitors.

Filoni even issued a hands off notice to the novel writers and they didn't mention her at all in the book Inquisitor which was one of the better books in the new EU.

All we knew is at the end of the Clone Wars season 5, she was likely headed to the Citadel . Then they showed the execution of her master in Rebels season 1 and that was it.

I kinda loved what they did with her, she had grown so disgusted with the Jedi and the war that she wanted to bring the Jedi Order down.

Quote:
"I did it. Because I've come to realize what many people in the Republic have come to realize. That the Jedi are the ones responsible for this war. That we've so lost our way that we have become villains in this conflict. That we are the ones that should be put on trial. All of us! And my attack on the Temple was an attack on what the Jedi have become. An army fighting for the dark side. Fallen from the light that we once held so dear. This Republic is failing! It's only a matter of time."―Barriss Offee's confession[10]

She hadn't fallen to the Dark Side, but I'm pretty sure that she wasn't a hard convert to the Inquisitors side of things. I mean you throw in a few lines about how you agree with her that the Jedi were the problem, that you are giving her the chance to bring justice to them, and then throw in a or else, and blammo you have an inquisitor.
