Not really. If you were signing a 35-year-old for that season only, obviously you wouldn't offer him that kind of money.

But adding the 8th year allows you to offer the player more total money (which is important to guys just hitting UFA for the first time) while slightly lowering his cap hit (which is important to teams at all times).

If a player would sign for $9m for 7 years, he's very likely to accept $8m for 8 years. It's only an extra million for his 35-year-old season, but he has no guarantee that he'll still be able to play at that age. The team shaves a full million off his cap hit, which makes him easier to trade if necessary, and may be necessary to make an offer of that size in the first place.
