I tried a bunch of flavors in Hawaii years ago. Tabasco spam was surprisingly good and I had never thought it would have synergized. I always add tabasco when I make spam musubi now.
Garlic and jalapeno were OK. Hickory not bad, but I think the way I did it made it taste a little teriyaki-like. But Hickory spam burnt ends might be damn good idea.
Bringing up spam is actually making me wonder if a thin BBQ sauce infused piece of spam below the McRib patty would actually taste good.
