It might just be down to redoing the RJ-45 ends on the cables to make sure they're done to the same T-568A or T-568B termination at each end, but you'd need to see for sure what the 'CAT' rating on the cable is. My last house was built in 2008 and was all CAT-5e so it worked just fine.
I would try my damnedest to make sure the Decos are hardwired. Having a wired backhaul will pay dividends on your speed and reliability. You can use some of that excessive coaxial cable to run MoCA adapters (Ethernet over Coax) if need be, but it'll add some clutter so make sure you have somewhere to hide the cabling.
