Or maybe they do have capacity? I think they were also running YYZ 1x daily too.

I heard the cargo loads on Narita were pretty good too, maybe that factored into the decision.

Rome was 5x weekly before, what was NRT?
I wouldn't be surprised if they were willing to cut a domestic turn to wedge in more long haul during the summer. Prices are looking pretty strong.
I think they have more trouble filling the 787 in the winter. Eg I came back from PVR on a 787 in late Oct, and it couldn't have been more than half full, with tons of completely empty rows. Probably flying to Toronto would be better than that.
