Maybe you pull in to a parking lot and do it there, but that's another chance for video surveillance etc to get a lead on who it is.
I get armed guards don't make financial sense and would be overkill, and I've sent fairly expensive items (eg jewelry) by mail before without issue. But once we were above $10 MM I'd be tossing a tracker in the bottom of the package just in case. They're not expensive.
