Genuinely asking, have you ever actually worked in the industry? Tables that are around after close aren't ordering drinks or anything, they're finishing up, the tab is brought around as soon as possible, and they're leaving. They don't have a choice, the bar and the kitchen are closed, and they are all but invited to finish their meal, and leave.
