Romo makes $17 million a year and Olson $10 million. You aren't going to lure a newly retired NHL player (Marleau for example) to spend his winters doing color for $100k CAD. The reason dinosaurs are still doing color is that most of them didn't make millions of dollars when they played and doing color was a means to make a supplemental income. Nowadays even depth players end up retiring as millionaires.
