I still think there is an amazing story out there that could be told.
Who's more evil, the people that do "Evil" things, or the people that created them?
Its the whole premise of the Sith and Jedi war. I think there's a really interresting story that's kind of been hinted at and told in the Legends EU books that could make some real shades of gray storylines.
The Jedi of the old republic weren't the benevolent knights doing good deeds around the galaxy like they're talked about in the modern era.
They were monastic monks who studied the force and were incredibly rigid in their beliefs. When a group of Jedi asked to study all aspects of the Force, Dark and Light, they were shunned, banished and then pretty much exterminated by the Jedi with the survivers being exiled where they found the Sith race and formed the Sith belief system, driven by their hate for the Jedi who killed without mercy.
Then when the Sith did return and invade the Republic, the Jedi defeated them. Then followed them back to their world and enacted while the Republic smiled a program of genocide, extreminating males, females and children without mercy.
Even in peace the Jedi of the old republic were more like feudal war lords, ruling planets and people.
When another Sith Jedi war started again, the Jedi didn't care about the non force users of the galaxy, they formed a military and fought a brutal war that included destroying entire planets eco systems, using child soldiers and forced conscription into their military. Jedi were less about good deeds then they were about being a military for the republic. They and the Sith were barbarians.
At the end of that two Sith survived and went into hiding, and while the Jedi were forced to give up their militaries and pretty much put down their light sabers they were more about serving the republic and the Senate then they were the force. It was ok to do good acts and charitable acts as long as they benefited the republic.
When Palpatine talked about the fact that the Sith and Jedi are nearly identical, he wasn't really lying, they are. The Sith crave power so they can gain more knowledge. The Jedi crave knowledge because it allows them to gain more power. They both want peace, but the Jedi want freedom, the Sith want order and Justice.
The Jedi, so called follow the currents and desires of the force. The Sith try to command the force.
And the people that don't have the force are caught in between an enternal battle between the Dark and the Light.
A old republic story that shows the Jedi as rigid war like and almost like the Inquisitors or the Spanish inquisition would be interesting and deepen the storyline.
Also the Force powers of the Jedi and Sith were super powered compared to the modern Jedi's more limited skills.
I mean they could snuff out a sun, create monstrous storms. The Sith could create and mutate life.
doing a movie or a series like this would deepen he Lore. Why did Maul like the idea of the Sith finally having their revenge on the Jedi? Why did Palpatine talk to Anakin about the lies and dogma of the Jedi?
