I don't think that has anything to do with the woman being "hard to get" but everything to do with the man wanting more variety.
Think of it this way: every night for dinner you eat chicken and potatoes with apple pie for dessert. There's nothing wrong with that; you certainly like chicken and pie. However, one night you're presented with the option of having roast beef and cake instead of chicken and pie. Which one do you choose?
